Citrus Zucchini Loaf

Loaves are a great snack and an excellent way to get some "good stuff" into yourself and your kids. This recipe features flax, fruit and whole grains... who can say no to that!

1 1/2 Cups Whole Wheat Flour
1 Cup Ground Flax Seed
2 tsp Baking Powder
1 tsp Cinnamon*
1 tsp Baking Soda
1 Cup Brown Sugar
2 Eggs
1/4 cup Melted butter
The Juice of 1 lemon and 1 orange to equal 1/2 cup
1/3 Cup unsweetened apple sauce (or pureed apples)
1/2 Craisins

Preheat oven to 350F. In a large bowl mixture together flour, flax, baking powder, baking soda, and cinnamon. In a medium bowl beat eggs and until even and add sugar. When it is blended, add lemon/orange juice, apple sauce, butter and craisins. Make a well in the dry ingridients and combine the wet and dry. Spray a 9 x 5 in loaf pan with non-stick cooking spray and add mixture. Bake for 45 minutes.
