Stir until just combined; if you find it a tich to thick this is where the "bit" more of orange juice comes in handy. Scoop into muffins tin (makes 12) and bake for 15-20 mins. This recipe was inspired by my new favorite show <a data-mce-href="http://beta.abc.go.com/shows/the-chew" href="http://beta.abc.go.com/shows/the-chew">"The Chew"</a>. Clinton shared his homemade granola and I decided to do my own. I always thought it would be something very difficult to make... not sure why. Anyhow, the basic concept to remember is 3 cups rolled oats and 1/2 cup portions of everything else.<br />
3 Cups Rolled Oats<br />
<span class="mceItemHidden">1/2 Cup Honey and Maple Syrup Combo</span><br />
1/2 Cup Vegetable Oil<br />
<span class="mceItemHidden">1/2 Cup <span class="hiddenSpellError" pre="Cup " style="border-bottom-color: red; border-bottom-style: solid; border-bottom-width: 2px; cursor: default;">Craisins</span></span><br />
1/2 Cup Coconut<br />
1/2 Mixed crushed nuts (You can always use seeds or dried fruit instead)<br />
1/2 Flax seed<br />

In a large bowl combine dry ingredients and in a medium bowl combine wet. Mix both well and then add the wet to the dry. Place parchment paper on a large baking sheet and spread the mixture evenly across. Bake for 1 to 1 1/4 hour until golden, mixing every 15 to 20 minutes. </span><br />

Spring makes me think of fresh things like tulips, lemons, sweet tea and sunshine. This recipe is the perfect match for the oncoming of spring. It blends the fresh tastes of spring with the warmth of what winter has left us. I serve this as a dessert or as a special treat when some is coming for coffee.<br />
<br />
4 Large Eggs<br />
1 tsp Vanilla<br />
2 tsp Lemon Zest<br />
1 Cup Butter - Soft<br />
2 cups Sugar<br />
1/2 tsp salt<br />
2 Cups Flour<br />
2 Cups Cranberries * <br />
1/4 Cup lemon Juice **<br />
1/4 Orange Juice ***<br />
<br />
Preheat oven to 325F. In a bowl, mix together egg, vanilla and zests. In a mixing bowl, beat butter until smooth; slowly add 1 1/4 cups of the sugar and the salt. Once mixed, add the egg mixture until even. Add flour slowly, reduce speed to low and beat for 3-5 minutes. Spray a 9x5 loaf pan with non-stick cooking spray (or grease with butter), pour mixture into the pan and bake for 60-70 minutes; start checking at 60 minutes with the "toothpick trick".<br />
<br />
In a sauce pan over medium heat add lemon juice, orange juice, remaining sugar and cranberries. Simmer for 5 minutes until cranberries have burst. Place a strainer in a bowl and pour the sauce into the strainer allowing the liquid to empty in the bowl, press the cranberry mixture to get out all the "goodness". Pour sauce over each slice at serving time.<br />

* I often have fresh cranberries in my freezer; however frozen cranberries work just as well.<br />
**Use the juice of the lemon that was zested for the cake and top up with lemon juice if needed.<br />

Preheat oven to 350F. In a large bowl mixture together flour, flax, baking powder, baking soda, and cinnamon. In a medium bowl beat eggs and until even and add sugar. When it is blended, add lemon/orange juice, apple sauce, butter and craisins. Make a well in the dry ingridients and combine the wet and dry. Spray a 9 x 5 in loaf pan with non-stick cooking spray and add mixture. Bake for 45 minutes.<br />

My husband is not home until 6:30- 7pm but my daughter eats at 5:30. So I have had to come up with different meal ideas on the nights that I am choosing not to cook or to eat later with my husband. I do not like to give the canned-prepared foods often (However, I do...because let's be honest sometimes the day just calls for "easy")so I try to find quick and healthy meals my dusghter will eat. Grilled cheese with yam fries is one of them and it is easy to make!<br />

This is a single portion.<br />
<br />
Grilled Cheese<br />
<br />
2 pieces of bread<br />
2 tbls Mayonnaise<br />
1 slice of Ham<br />
4 cherry tomatoes chopped<br />
2 tbls butternut squash puree<br />
Cheese- Your choice on the type and the amount. <br />
Butter - Optional. I do not use it with my griller.<br />

If you are using butter, butter the outside of the bread.On one piece of bread apply the mayo and on the other the butternut squash puree. Place cheese on both pieces of bread and then put the tomato and ham on the inside. Salt and pepper to taste. Place together and grill until golden. If you are using a griller, about 4-5 minutes. If you are using a pan, heat the pan on medium and it usually takes 2-3 minutes a side to be done. <br />

Yam fries<br />

1/2 a yam or sweet potato <br />
Olive oil<br />
1/2 tsp Cinnamon<br />
salt and pepper<br />

Preheat oven to 400F Oven Slice yam so they are long and thin... like french fries. Add olive oil, cinnamon, salt and pepper to a tupperware container. Toss teh yams in the olive oil mixture. Spray a pan with non-stick spray and place the yams on the pan. Bake for about 15 minutes, turning often.<br />

HOWEVER, THESE are fantastic!! I stumbled upon a recipe about 5 years ago and have changed a few things to make it yummier... and a bit more fun. I will say that this is not a recipe for first time bakers... but if you are patient and willing to try it anyone can do it! I fumbled it up a few times as well... so if you fail, try again :)<br />

3 Envelopes of gelatin (I use Knox)<br />
3/4 cup cold water (1/2 and 1/4 portioned)<br />
2/3 cup corn syrup<br />
2 cups granulated sugar<br />
1/4 tsp salt<br />
1 tbsp vanilla<br />
Icing Sugar, fine coconut, and finely chopped nuts (even parts for dredging)<br />

Grease a 9 x 9 pan, line with plastic wrap and grease the plastic wrap. Pour 1/2 cup of water in a bowl and with an electric mixer add gelatin. Let it sit for 10 minutes. In a saucepan over medium heat ad sugar, corn syrup and 1/4 cup water, slowly bring to a boil and then allow it to hard boil for 1 minute, it will be a syrup when it is done. Pour syrup into the gelatin mixture and mix at a high speed. Add salt and vanilla and beat for 12 minutes. Pour mixture in to the lined pan (You want to have the spatula and your hands oiled) with another piece of oil plastic wrap press the mixture in to the pan. Let it sit f our several hours. When it is ready remove the marshmallow from the pan and dredge in the icing sugar mixture, cut the slab into 12 equal parts and re-dredge in the mixture. **Use a very sharp knife or scissors to cut the slab.<br />

3/4 Cup All purpose Flour<br />

Preheat oven to 325F. Combine dry ingredients in a large bowl and mix with a whisk - This acts as a sifter. One at a time add the wet ingredients. Mix with a wooden spoon until m=smooth. Add nuts* and mix. Spray a loaf pan (5 x 9) with cooking spray and pour mixture into pan. Bake for 1 hour 30 minutes. I always start doing the toothpick test at 1hour 15 minutes to be sure not to over cook.<br />

* You can substitute nuts for chocolate chips, raisins, craisins or any other small treat. <br />

This one is easy and everyone LOVES rice crispy squares... this just has a little bit of extra panache! <br />

10 Cups Rice Crispy Cereal<br />
1 bag of mini marshmallows<br />
1/4 cup butter<br />
2 tsp Vanilla<br />
4 squares semi-sweet chocolate (I like the Bakers Chocolate)<br />

Grease a 9 x 13 inch pan. <br />
<br />
In a large pot melt butter and ass marshmallows; stir continuously until smooth. Stir in rice crispy cereal a few cups at a time. Transfer to the greased 9 x 13 pan. Press the mixture in with a metal spoon. (Run the spoon under cold water before hand*) Place in the fridge until complete cool and firm. Cut into preferred size. <br />
<br />
In a double boiler; melt chocolate. Be sure to stir the chocolate continuously for optimal results. Once melted; dip 1/2 the square into the chocolate and place on parchment paper to cool. <br />
<br />
Variation: You can also "double dip" and do the other side in white chocolate following the same procedure. Or dip half of the tip that is already covered. <br />

Food Coloring - As much or as little as you need to get the color right!*<br />

In a large mixing bowl, or a large bowl with a hand mixer combine butter and cream cheese on a medium to high speed. On a slower speed add icing sugar a bit at a time (The large mixing bowl can take the whole amount if you have the protected around the bowl.). Once blended add vanilla and any food coloring (if needed). <br />
<br />
*Start with only a few drops... a little goes a long way!<br />

I usually do up breaded chicken (Shake'n'bake style... but homemade) and seasoned oven roasted potatoes with yes, you guess it Caesar salad. Over the next week I will post my various recipes for this but tonight I will start with the croutons!<br />

Seasoned Croutons<br />
<br />
3 cups of cubed fresh bread (I like sourdough or ciabatta)<br />
2 tsp Garlic Powder<br />
2 tbls Parmesan cheese - finely grated.<br />
1/2 tsp Salt<br />
1/2 tsp Pepper<br />
1 tbls Olive oil<br />
<br />
Preheat oven to 350f. Mix the spices with the olive oil in a large sealable container or large freezer. Add bread cubes 1 cup at a time and shake until all three cups are nice covered. Spray a large baking sheet with non-stick cooking spray and evenly spread the cubes over the sheet. Bake for 12 minutes. (Do not leave these unattended as they burn quick. I always check mine at 5 minutes and then every couple minutes after)<br />

Homemade croutons, fresh Caesar dressing and real bacon bits can truly make a boring Caesar into a delight!<br />

Batter<br />
Non stick cooking spray<br />
1 Cup brown sugar<br />
4 tbls margarine *<br />
1 1/4 Cups low fat butter milk or non-fat milk *<br />
1 Cup Sour Cream *<br />
1 Egg<br />
2 tsp Vanilla<br />
2 Cups Whole Wheat Flour<br />
2 tsp Baking Powder<br />
1/2 tsp. Cinnamon*<br />
1/2 tsp Salt<br />

Preheat oven to 350f. Spray an 8x8 baking pan with nonstick cooking spray. In a mixing bowl or with an electric beater combine margarine and sugar. Add milk, sour cream, egg and vanilla. Add flour, baking powder, cinnamon and salt. Mix well. Pour half the batter into the pan and then spread puree and sprinkle marshmallows. Top with the remaining batter. Mix the topping ingredients in a small bowl and sprinkle over the batter. Bake for 55-60 minutes. (Always do the toothpick test to be sure) Let cool and serve.<br />

* I use butter instead of margarine, 1% instead of buttermilk or non fat, mayonnaise instead of sour cream, apple spice by epicure instead of cinnamon and stuck with walnuts. I know the mayo substitution sounds weird but this cake takes great... so I think it may the secret! Also, I had about 1/3 of a cup of leftover zucchini puree so I used that and 2/3 cup squash puree.<br />

I had bought them for burritos and had several left over that would go bad before being used again. So I put my creative chef hat on and did something! Jason thought they were great (and thought I bought them at the store...lol) and Georgia loved to dip them in her soup so I would consider these a home run!<br />

6 Tortilla Shells<br />
4 tbls Olive Oil<br />
1 tsp Garlic Powder<br />
1/2 tsp Salt<br />
1/4 tsp Cayenne and Pepper<br />

Preheat oven to 375f. Spray 2 baking sheets with non-stick spray. In a bowl mix together the olive oil and seasonings and brush on to both sides of the tortillas. Cut the tortilla into 8 equal triangular parts and place on the baking sheets. Bake 4-5 minutes and flip, then bake for another 2-3 minutes. You do need to watch them as they brown quite fast.<br />
<br />
These are great with any dips, or as a substitute for bread with soup.<br />

I found this recipe initially in the best of bridge; however I have changed it to suit my tastes and what is readily available in my fridge. This is not the "dieters friendly" recipe! :)<div><div><br /></div><div>4 Potatoes (Peeled and sliced length wise)</div><div>1/4 cup Butter</div></div><div>2 Green Onion</div><div>1 Clove of garlic</div><div>1-2 cups Special K-Crushed</div><div>1 cup Cheddar Cheese - Grated</div><div>1/4 tsp Paprika</div><div>Preheat oven to 375f. Clean and peel the potatoes and slice them in half lengthwise. Place them flat side down and slice 1/4 inch slices crosswise about 2/4 of the way down. In a saucepan melt the butter and sautee green onion and garlic. Spray a casserole dish with non-stick cooking spray, and place the potatoes in the center. Once the garlic and onion are done (about 3 minutes) pour the butter sauce over the potatoes. Crush the special k and added the grated Cheddar cheese to the mix. Spread over the potatoes and butter. Sprinkle the paprika on for colour and place in the oven for 40 minutes. This soup is a <span class="blsp-spelling-corrected" id="SPELLING_ERROR_0">favorite</span> in our home, my husband loves it and my daughter eats it.<div><br /></div><div>1 Large butternut squash or 2 medium ones.</div><div>2 carrots</div><div>1 yellow onion</div><div>2 leeks (white part only)</div><div>1 heaping <span class="blsp-spelling-error" id="SPELLING_ERROR_1">tbls</span> Butter</div><div>8 cups of chicken <span class="blsp-spelling-corrected" id="SPELLING_ERROR_2">broth</span></div><div>1 apple (tart- granny smith)</div><div>1 pear</div><div>Salt and pepper to taste</div><div>Sour Cream</div><div><br /></div><div>Preheat oven to 350f. Cut squash in half lengthwise (be sure to take the pulp out)and place in a roasting pan with 1 inch of water. Bake in the oven until soft and the skin easily peels off. Meanwhile, in a large pot melt the butter. Chop the carrots, onion and leeks into large chucks and <span class="blsp-spelling-corrected" id="SPELLING_ERROR_3">sautee</span> in the butter for about 3 minutes. Add chicken <span class="blsp-spelling-corrected" id="SPELLING_ERROR_4">broth</span> and let it simmer for about 30 minutes; until vegetables are done. Peel and chop the apple and pear. Add apple, pear, and squash to the <span class="blsp-spelling-corrected" id="SPELLING_ERROR_5">broth</span> and simmer for 30 minutes. Puree in a food processor, blender or with a hand blender until smooth. Add salt and pepper to taste and keep warm until serving time. This book is based on the principal of putting pureed veggies and fruit into the food your kids/family already eat! I love it because it is food you give your kids anyway so what is wrong with throwing in a little spinach in with the blueberry bars, a bit of squash with the macaroni or chickpeas with the cookies! Now, I have had a few friends comment about how they want there kids to know they have to eat vegetables or that they can't lie to their kids about it. COME ON PEOPLE!! You lie to them about Santa, the tooth fairy and the <span class="blsp-spelling-corrected" id="SPELLING_ERROR_1">Easter</span> bunny... often to ensure good behavior but you feel bad lying about a bit of spinach in their blueberry bar?? Really, that is crazy to me! Now, I will admit my kids have to eat vegetables and they do, but there are certain ones they won't eat or don't like. That is where this book comes in. So I ask ... would you rather your children have a variety of vegetables and fruit in their diet (whether they know it or not) or are you content with them only eating carrots and cucumber? Drain when cooked. While the noodles are boiling, coat a large sauce pan with cooking <span class="blsp-spelling-corrected" id="SPELLING_ERROR_6">spray</span> and the oil and then flour. Stir until the mixture is a paste, do not brown. Add the milk and stir until think. Add the squash puree, cheeses and seasons. Stir until sauce is smooth and the cheese has melted. Add in the macaroni noodles and serve. </div><div><br /></div><div>You can also use cauliflower puree. I make butternut squash soup <span class="blsp-spelling-error" id="SPELLING_ERROR_7">a lot</span> so I often use the leftover as the puree. I like to double the cheese sauce recipe and make the macaroni a little creamier and save some of the sauce for quick lunches and dinner for the kids. Last night, with snow in the forecast, I made stuffed chicken breast and tonight, with the snow falling, I am making creamy pasta and scones.<br /><br />Stuffing and scones can often seem daunting to make from scratch. However, I have found the opposite to be true and much yummier than the store bought options.<br /><br /><strong>Bread Stuffing<br /></strong>* This is great for chicken and pork chops*<br /><br />¼ Cup Butter (plus 2 tbsp)<br />½ Onion – finely chopped<br />½ Apple – peeled and finely chopped<br />1 Celery Stalk – finely chopped<br />5 Cups Dried Bread Cubes * I buy french loaf and dry out half of it for about a week<br />½ tsp Savory<br />½ tsp Worcestershire<br />Salt and Pepper to Taste<br />Water to Moisten<br /><br />Melt butter in a sauce pan and sauté onion. Combine the remaining ingredients, except bread cubes and water, and add to the onion. Heat well and stir frequently to avoid browning. In a large bowl, toss bread cubes in butter mixture. Add water to moisten bread cubes; the mixture should be damp not wet. The bread should still feel firm.<br /><br />Stuff into chicken breast or pork chops and cover; bake at 375F for 35 min. (Remove cover after 15 minutes).<br /><br />To stuff a chicken or turkey cavity: Double the recipe and DO NOT add water.<br /><br /><strong>Garlic and Cheese Scones<br /></strong><br />1 ½ Cups Flour<br />2 tbsp Butter<br />½ tsp Salt<br />1 ½ tsp Baking Powder<br />½ Cup Grated Cheese<br />1 Garlic Clove – minced<br />1 tbsp Mustard<br />¾ Cup Milk<br /><br />In a large bowl mix flour, salt and baking powder; cut in butter with a pastry cutter (or rub in with your fingers) until the mixture has the consistency of bread crumbs. Stir in cheese and garlic. Make a well in the centre of the mixture, add mustard and milk. Knead lightly until combined. Cut into 2” imperfect balls (a little larger than a golf ball) and place in a greased muffin tin. Berry jam and cranberry sauce are easy to make and appreciated by all!<br /><br /><strong>Berry Jam<br /><br /></strong>9 Cups Berries (I freeze my summer berries for jam)<br />4-6 Cups Sugar (depending on how sweet you like it)<br /><br />In a large pot, combine berries and sugar. Slowly bring the mixture to a boil, stirring occasionally until the sugar dissolves. Cook rapidly to jelly point*.<br /><br />*When you dip a cold metal spoon into the boiling mixture and the liquid slowly drips from the spoon.<br /><br />Makes 4 – 16 oz jars*<br /><br /><strong>Cranberry Sauce<br /></strong><br />2 lb Cranberries (Fresh is best but frozen will do)<br />1 Cup Orange Juice<br />1 Cup Water<br />2-4 Cups Sugar (depending on how sweet you like it)<br />Rind and pulp of 2 lemons or Limes – finely chopped<br /><br />Combine Sugar, Juice and Water in a pan and bring it to a boil for 5 minutes. Add the cranberries and lemon/lime. Cook over a low heat, stirring occasionally. Now that I back into a routine, I made the decision to get FRESH IDEAS - FRESH GAL back up and running. So without further adieux, the first recipe for November 2011. Enjoy!<br /><br /><strong>Stroganoff<br /></strong><br />Stroganoff is a hearty meal and terrific on a cold night so with snow in the forecast for Vancouver this weekend I thought this would be the perfect meal!<br /><br />This can be made with beef strips, beef chuck or meatballs. Tonight I am doing meatballs (inspired from the best of bridge – best of the best)<br /><em><br />Meatballs<br /></em><br />1 lb Extra Lean Ground Beef<br />½ Cup Bread Crumbs<br />¼ Cup finely Chopped Vegetables (onion, celery, and carrot is best)<br />1 Egg<br />1 tsp Garlic Powder<br />Salt and Pepper to taste<br />Add milk to moisten… about 2 oz.<br /><br />Combine all the ingredients in a large bowl. Mix well with your hands and form into balls about 1 inch round. Place in a roasting pan with a ¼ inch of water on the bottom. Bake at 350 F for 35-40 minutes.<br /><em><br />Sauce<br /></em><br />1 Large Onion Finely Chopped<br />¼ Cup Butter<br />¼ Flour<br />¼ Ketchup<br />2 ½ Cups Beef Broth<br />1 Cup Sour Cream<br />1 – 10oz Can Cream of Mushroom Soup<br /><br />Melt butter in a sauce pan and sauté onion. Add flour and mix well. Stir in ketchup and beef broth, cook until sauce is thick. Stir in sour cream and mushroom soup. Pour into a casserole dish and add the meatballs. Keep in a warm oven until you are ready to serve. I want to expose my daughter to as many foods and spices as possible, plus keep it simple as she prefers to feed herself now. With that in mind, I need to consider my husbands’ less than adventurous palate. Chicken is a staple in our house so I love to try new chicken recipes.<br /><br />Yesterday afternoon I pulled out my “old faithful” (Best of Bridge Cookbook set) and started the search. This recipe jumped off the page for me as it fit my recent needs in cooking: simple, quick and can be prepared in advance plus it can be modified to fit my pantry stock!<br /><br /><strong>Classy Chicken</strong><br /><br />No black-tie required but it sure tastes it! I modified the recipe (surprise) to accommodate what I had on hand.<br /><br />3 Boneless Skinless Chicken Breasts<br />¼ tsp Pepper<br />3 tbsp Butter<br />2 ½ Cups Broccoli and Carrots (mixed)<br />1 10oz can of Cream of Mushroom Soup<br />½ Cup Mayonnaise<br />1 tsp Curry Powder<br />1 tsp Mustard<br />1 tsp Lemon Juice<br />1 Cup Grated Sharp Cheddar Cheese<br /><br />Cut the chicken into bite size pieces and sprinkle with pepper. Melt butter in a skillet, and <span id="SPELLING_ERROR_0" class="blsp-spelling-error">sauté</span> chicken for about 6 minutes. Once chicken is opaque, remove it from the skillet and add in the vegetables; <span id="SPELLING_ERROR_1" class="blsp-spelling-error">sauté</span> until tender crisp. Drain any excess liquid and arrange in the bottom of a butter casserole dish. Place the chicken on top. Mix together soup, mayonnaise, mustard, curry and lemon juice; pour over the chicken. My home life is pretty busy at the moment; my daughter is now 13 months, I have started a new business venture, and I am pregnant with our second child, so my new focus is on quick and simple meals that can be prepared in advance.<br /><br />Weekends have been very hectic as we are trying to get settled into our new home. Muffins served with eggs and fresh fruit is what is on my breakfast table most mornings now.<br /><br /><strong>Blueberry-Lemon Muffins</strong><br /><br />My Aunty Sharon made these muffins when we were visiting over the holidays, and I absolutely love them. (She has a few other recipes I will pass on at some point too) The original recipe is from the Best of Bridge Collection. I have modified the recipe to have whole wheat flour and brown sugar and removed the sugar topping to make the muffins a bit healthier.<br /><br />1Cup White Flour<br />1 Cup Whole Wheat Flour<br />¼ Cup Oats<br />½ Cup Brown Sugar<br />1tbsp Baking Powder<br />½ tsp Salt<br />Rind of 1 Lemon<br />1 Egg<br />1 Cup Milk<br />½ Cup Butter, Melted<br />1Cup Blueberries (Fresh or Frozen)<br /><br />Mix flour, oats, sugar, baking powder, salt and lemon rind in a large bowl. In a separate bowl; add milk and butter. Add egg mixture to dry ingredients and stir until just mixed. Gently stir in blueberries.
