Buttered Potatoes

Potatoes have become a staple to every meal in my home so finding different ways to make them is key. I found this recipe initially in the best of bridge; however I have changed it to suit my tastes and what is readily available in my fridge. This is not the "dieters friendly" recipe! :)

4 Potatoes (Peeled and sliced length wise)
1/4 cup Butter
2 Green Onion
1 Clove of garlic
1-2 cups Special K-Crushed
1 cup Cheddar Cheese - Grated
1/4 tsp Paprika
Preheat oven to 375f. Clean and peel the potatoes and slice them in half lengthwise. Place them flat side down and slice 1/4 inch slices crosswise about 2/4 of the way down. In a saucepan melt the butter and sautee green onion and garlic. Spray a casserole dish with non-stick cooking spray, and place the potatoes in the center. Once the garlic and onion are done (about 3 minutes) pour the butter sauce over the potatoes. Crush the special k and added the grated Cheddar cheese to the mix. Spread over the potatoes and butter. Sprinkle the paprika on for colour and place in the oven for 40 minutes. The potatoes should be soft enough to poke a fork through and the top should be crisp and brown.

These are great with any hearty meal and look like nice for a dinner party.
