Banana Loaf

Banana loaf is a staple in our home. I usually make 1 - 2 loaves a week. It is easy and fairly healthy... if you use the right ingredients. Here is the recipe I have created from years of making banana bread. (and I make it in 1 bowl - bonus!)

2 Cups Whole Wheat Flour
3/4 Cup All purpose Flour
1/3 Cup Oats
1 tsp Cinnamon
1/2 tsp Baking Soda
2 tsp Baking Powder
1 cup Brown Sugar
2 eggs
2 tbls melted butter
3/4 Cup Sour Cream
2 cups Banana Puree
1 tsp Vanilla
1/2 Cup Nuts* (Optional)


Preheat oven to 325F. Combine dry ingredients in a large bowl and mix with a whisk - This acts as a sifter. One at a time add the wet ingredients. Mix with a wooden spoon until m=smooth. Add nuts* and mix. Spray a loaf pan (5 x 9) with cooking spray and pour mixture into pan. Bake for 1 hour 30 minutes. I always start doing the toothpick test at 1hour 15 minutes to be sure not to over cook.

* You can substitute nuts for chocolate chips, raisins, craisins or any other small treat.
