WOW! It has been six months since my last post, and to be honest, the time has flown by! I launched my new business, settled in our new home and had baby. Now that I back into a routine, I made the decision to get FRESH IDEAS - FRESH GAL back up and running. So without further adieux, the first recipe for November 2011. Enjoy!
Stroganoff
Stroganoff is a hearty meal and terrific on a cold night so with snow in the forecast for Vancouver this weekend I thought this would be the perfect meal!
This can be made with beef strips, beef chuck or meatballs. Tonight I am doing meatballs (inspired from the best of bridge – best of the best)
Meatballs
1 lb Extra Lean Ground Beef
½ Cup Bread Crumbs
¼ Cup finely Chopped Vegetables (onion, celery, and carrot is best)
1 Egg
1 tsp Garlic Powder
Salt and Pepper to taste
Add milk to moisten… about 2 oz.
Combine all the ingredients in a large bowl. Mix well with your hands and form into balls about 1 inch round. Place in a roasting pan with a ¼ inch of water on the bottom. Bake at 350 F for 35-40 minutes.
Sauce
1 Large Onion Finely Chopped
¼ Cup Butter
¼ Flour
¼ Ketchup
2 ½ Cups Beef Broth
1 Cup Sour Cream
1 – 10oz Can Cream of Mushroom Soup
Melt butter in a sauce pan and sauté onion. Add flour and mix well. Stir in ketchup and beef broth, cook until sauce is thick. Stir in sour cream and mushroom soup. Pour into a casserole dish and add the meatballs. Keep in a warm oven until you are ready to serve. Serve with Egg noodles.
