Since it has been a few weeks, I thought I would start off easy! Quick yet tasty dinners are often hard to come by, however chicken is a great base for it! This dinner menu is served in my home often and my husband thinks I slaved all day!
Breaded Lemon Chicken
4 Boneless Skinless Chicken Breasts
1/4 Cup Lemon juice
4 Tbsp Olive oil
4 Tsp Lemon Pepper seasoning
1/4 Cup Seasoned Bread Crumbs
Marinate chicken breast in lemon juice for at least one hour. In a bowl with a lid, mix together olive oil and lemon pepper seasoning. Remove chicken from lemon juice and add to oil mixture, coating the chicken thoroughly. Add the bread crumbs to the chicken place the lid on the bowl and shake until completely covered.
Cook at 350C for 30 minutes.
Sides:
Turnip and Carrot
Steam 1 turnip and 3 carrots; mash when softened. Add butter and brown sugar to taste.
Baby Potatoes
Boil baby potatoes until tender. Remove from water and coat lightly with butter, salt and pepper.
Serve with a chopped salad and fresh bread if desired!
I made the chicken and it tasted great. Keep them coming!
