Since this is my first posting, I thought it would be appropriate to share the first dish I ever made on my own. It was for my dad’s birthday when I was about 13.
This recipe is easy to prepare and is great for a quick meal.
3 Cups Egg Noodles
1 Tbsp Olive Oil
1lb Extra Lean Ground Beef
1 Yellow Onion, Chopped
1 Red Pepper, Cubed
1 Carrot, Sliced in strips
1 Cup Mushrooms
4 Tomatoes, Cubed
1/2 Cup Tomato Sauce
1/8 Cup Red Wine
1/8 Fresh Parsley
½ tsp Dried Basil (or ¼ tsp fresh)
¼ tsp Dried Oregano (or 1/8 tsp fresh)
½ tsp cayenne or chili peppers … something to give it a kick!
Salt and Pepper to taste
Cook Pasta until el-dente in a large pot of salted water.
In a skillet, heat olive oil over medium to high heat and add ground beef. Stir often for about 5 minutes. Add onion and cook until transparent, about 2 -3 minutes. Add carrot, red pepper and mushrooms; cook for 5 minutes until vegetables are tender. Add the tomatoes, tomato sauce, red wine and seasonings; cook for another 5-10 minutes. Stir in noodles and serve with warm rolls or crusty bread.
This makes about 4 moderate servings.
